New Potatoes in Garlic and Chilli Butter

Cooking: 8 minutes
Serves: 4

Ingredients

  • 2.2kg (1lb) new potatoes of even size
  • 2 tbsp butter or margarine
  • 1 garlic clove, peeled and crushed
  • 1 small red chilli pepper, chopped
  • 1 tbsp freshly chopped cilantro
  1. Wash the potatoes and pat dry with a paper towel. Cut any larger potatoes to make them all an even size for cooking
  2. 2. Place the potatoes into a large Zip’n Steam™ bag
  3. In a mixing bowl, soften the butter with a spoon
  4. Add the chilli pepper, crushed garlic and cilantro and blend together well
  5. Spoon the butter mixture into the bag with the potatoes
  6. Seal well and place bag on a microwave safe plate
  7. Cook on full power for 8 minutes or until the potatoes are cooked through
  8. Allow the bag to stand for 1 minute and serve immediately

For a less spicy version, use only half of the chilli pepper
