Zip 'n Steam is the revolutionary new way to steam cook fresh food healthily, conveniently and quickly.
Steaming has long been recognised as a way to retain high levels of the natural goodness of fresh food. Yet the practicalities of cooking times, space and the required levels of culinary skill have made it difficult to incorporate into many catering kitchens, particularly receiving kitchens.

With an inbuilt vent to prevent the bag bursting, fresh food is steamed, pressure cooked and microwaved all at the same time. The result is that the food is cooked thoroughly with no cold spots, achieves a very high internal temperature that shortens cooking times and crucially, much more natural vitamins and nutrients are retained compared to any other traditional cooking method.
Results obtained by Reaseheath College, an independent research establishment, showed that in cabbage 85% of its Vitamin C, the most soluble of the vitamins, was retained when microwave steamed, as opposed to losing almost that amount when boiled in a saucepan.
Fresh food is prepared as normal, put into the bags, at either the sending or receiving kitchen, dependent on the facility, and then put in the microwave. There is no need to add water. Cooked for only a few minutes depending on type of vegetable and microwave wattage, the food retains texture, colour is enhanced so presentation is good and the taste is as the food should taste - wonderful!
When trialled, training staff to use the bag only took half a day, and the staff's own reaction was universally positive. Because they are used only once the bags run no risk of bacterial transferrence, and there's no washing up of pots afterwards.
